Ingredients

1 Each Our Specialty Original Naan
2 oz Butter
1 oz Olive Oil
48 oz Coconut Milk
4 oz Onion, Minced
2 Each Carrots, Chopped
8 oz Cauliflower, Broken Into Florets
16 oz Sweet Potatoes, Peeled And Cubed
1 oz Curry Powder
.08 oz Ground Turmeric
1 Pinch Red Pepper Flakes

Directions

Heat the butter and olive oil in a large pan over medium heat. Add the onion, and carrots; and stir until tender

Add the coconut milk and season with curry powder, turmeric, salt, pepper and red pepper flakes

Add the cauliflower and sweet potatoes to the pan, then stir to coat with the sauce

Reduce heat to medium-low and cover. Simmer and stir occasionally for 20 minutes, or until the sweet potatoes are tender. Serve with naan & enjoy!
