Brush a sheet pan with olive oil. |

Place 1 ounce olive oil and the roasted red peppers in blender, and blend until chunky smooth. |

Place thawed flatbread on oiled pan and brush with the blended pepper mixture. |

Sprinkle on the Italian herbs and salt. |

Bake in a convection oven at 375 degrees for 5-7 minutes, conventional oven at 425 degrees for 8-10 minutes, or in conveyer oven at 500 degrees for 3 minutes until top is lightly brown. |

Remove flatbread focaccia from oven and sprinkle with mozzarella. |

Let set for 2-3 minutes until cheese is just melted. |

Use a pizza cutter to cut the focaccia in half, then cut each half into one inch strips. |
