A crispy combination of Potatoes, Onions, Fresh Chives, Parmesan Cheese and Rich's Quick Quiche that makes the perfect finger food when served with a dipping sauce of your choice.

2 C | Culinary Solutions Savory Eggspedites™ Liquid |
2 C | All Purpose Flour |
1 C | Richs Quick Quiche Mix |
Potato cakes can be cut into various shapes depending on menu application. Serve as an appetizer/finger food, salad accompaniment, or side dish.

Boil potatoes with the skin on until tender when pierced with a fork, then cool. |

Saute onion in 1 Tbsp. of olive oil until soft, then cool. |

Grate potatoes, using the large holes on a box grater. |

In a large bowl, mix the potatoes, onions, chives, and grated cheese, and season to taste. Add Savory Eggspedites®, and mix to blend well. |

Prepare a 9"x12" sheet pan by spraying with pan spray, and lining with sprayed parchment paper. |

Distribute Savory Eggspedites® mixture evenly in sheet pan. |

Bake in 350°F oven for 30 minutes or until fully set, and then cool completely. |

Turn potato cake out of sheet pan onto a clean cutting board. Cut into desired shapes. |

Using the standard breading procedure, using 1 cup of Quick Quiche in place of the egg wash, bread pieces and place on a sheet pan. Sprinkle each side of the pieces with olive oil. |

Bake in a 375°F oven until golden brown. |
