Spinach Stuffed Pizza | Rich's Canada




1 Pizza


1 14” or 16” Rich’s® Sheeted Pizza Dough (PC 34630 or PC 35086)
2 28 oz cans Plum tomatoes
2 Tbsp Olive oil
1 Tbsp and 1 tsp Oregano
2 tsp Basil, dry
3 cloves Garlic, chopped
9 oz Fresh spinach, chopped
8-10 oz Mozzarella cheese, shredded
1/4 cup Parmesan cheese, shredded


  1. Overnight: Remove sheeted dough from case, leaving wax paper intact, place on sheet pans. Cover with oiled plastic and refrigerate overnight.

  2. Put whole tomatoes in bowl and crush or break down slightly leaving some medium pieces intact. Mix in the olive oil, oregano, basil, and garlic, set aside.

  3. In a separate bowl, toss spinach and mozzarella together, set aside.

  4. Spray one piece of parchment paper placed on a full size sheet pan, place one piece of dough on parchment or oil bottom and sides of deep dish pizza pan. Place one piece of dough in pan and push into bottom and slightly up side of pan.

  5. Mound with spinach mixture, leaving about 1” from the edge of the crust with no spinach moisture.

  6. Top with second crust, then crimp edges of dough together to form a thick edge or braid the crusts together for signature look.

  7. Cut 3 or 4 – 1” slits on top crust to vent.

  8. Bake on bottom rack in convection oven at 375°F (190°C) without sauce until just turning golden brown or about 12-15 minutes.

  9. Remove from oven, top with sauce, sprinkle with Parmesan. Bake on middle or upper oven rack for another 10-12 minutes at 375°F (190°C) until bottom crust is golden brown.
