Cinna-Log
Updated baking format, same great taste. Rich’s Cinna-Log enables operators to be flexible with portion sizes.
Place a small amount of cinnamon smear (recipe below) on bottom of baking pan, for the candy texture after baking and grease sides of pan. Add 4 by 3 oz portion of cinnamon rolls stretched to about 6 inches, swirl side up or down. Proof cinnamon roll till 2.5 times the size. Bake cinnamon buns till golden in colour, approximately 20 to 25 minutes in a 325’ convection oven. Brush Glaze N Shine on top of cinnamon logs while hot then drizzle with Vanilla Heat N Ice after bun has cooled, or spread cream cheese icing while hot.
As an option cinnamon bun can be served at room temperature or warmed in a microwave prior to serving.

1½ cup of brown sugar
1 cup of butter
1 cup of dark corn syrup or pancake syrup
1 tsp cinnamon

Familiar with a twist! These twists capture the essence of a Cinnamon Roll in a new portable format.
Stretch 3 oz portions of cinnamon rolls to about 6 inches long and twist while stretching then place on parchment lined baking tray. Proof cinnamon twists till 2.5 times the size. Bake cinnamon twists till golden in colour, approximately 20 to 25 minutes in a 325’ convection oven.Brush Glaze N Shine on top of cinnamon logs while hot then drizzle with Vanilla Heat N Ice after bun has cooled, or spread cream cheese icing while bun is hot.

Cinna-Twist
Cinnamon Sticky Bun
Rich, gooey and delicious! These simple-to-make breakfast buns are topped with the perfect blend of cinnamon, brown sugar, raisins and pecans.

Place Cinnamon smear (recipe below) on bottom and sides of baking pan, add chopped pecans and raisins. Add 6 by 3 oz portion of cinnamon rolls, swirl side up. Proof cinnamon roll till 2.5 times the size. Bake cinnamon buns till golden in colour, approximately 30 minutes in a 325’ convection oven. Allow cinnamon rolls to stand for approximately 10 minutes on table then turn upside down onto a platter.

As an option sticky bun can be served at room temperature or warmed in a microwave prior to serving.

Place 3 oz portion of cinnamon rolls to a parchment lined baking tray, insure cinnamon buns are at least 3 inches apart. Proof cinnamon roll till 2.5 times the size. Add pecans pieces to top of cinnamon roll or leave as is. Bake cinnamon buns till golden in colour, approximately 20 to 25 minutes in a 325’ convection oven. Top cinnamon bun with cream cheese icing while hot or caramel icing to pecan toped bun or drizzle with Vanilla Heat N Ice after bun has cooled.
